Since 2015, 3T has brought egg coffee from Hanoi's Old Quarter to Saigon. At Ngô Văn Năm, that heritage lives in a four-storey house on a premium street: wood, leather, dark patterned tile, a red spiral stair — and the two-layer egg coffee, golden cream over bold Robusta.

Fresh eggs whipped into a silky golden cream, soft and lightly rich; below it, phin-brewed Robusta, bold with a sweet finish. Stir lightly and the two layers meet.
