The craftsman's counter

Kappou Nishiyama is a traditional 割烹 counter on Pasteur Street — about ten seats around a dark hinoki-wood counter, where the chef cooks and serves right in front of you. Wabi-sabi in every cut, every shadow.

Ten seats, one flame

Kappou is Japan's oldest form of fine dining: the chef behind the counter, cooking each seasonal dish in front of the guest. At Nishiyama, the counter is the stage — embers, hinoki smoke, and the craftsman's eye.
